Hold on to your hats, kids. This What I Ate Wednesday post is going to take you back in time. I swear it. There was nothing too exceptional about what I ate on Monday which is the day all of these meals and snacks were captured. If anything it was a little on the lighter side of eating – for me anyway. Whenever I share one of these posts my mom typically asks me the inevitable question. Did you eat all of that food in one day? She will probably still ask, but like I always explain in my posts what is too much or not enough to another may be just right for you. I try to assure her that I need to fuel all my physical activity and that I still leave enough for Scott to eat. Most of the time that is. 🙂
WIAW #31: Flashback Desserts
So I experimented a little with breakfast the other day. I attempted to make a hash out of random items in our refridgerator. As well all know these types of things can often lead to what we call happy accidents. Sadly, this was not in the cards for me. The hash included a slice of chopped up bacon, zucchini and carrots cooked in coconut oil. I also fried two eggs along with my usual cup of coffee. Scott attempted to help me add artistic flair to an otherwise boring photo. The sear of the yolk and those little toppings were his idea.
Does it help? Maybe. Photography is still a matter where I am working on furthering my development. Though Scott aided in my photo efforts he still questioned my choices. “Carrots, really?”
He was right. They added an odd taste to the mixture. I was hungry and cooking this lackluster hash creation and the photo adjustments had already taken up enough time. I ate it and moved on. Maybe carrots are better baked?
Lunch was a little heavier than normal since I ended up working out mid-morning. After the letdown of the carrots I did some work on the computer and then grabbed another cup of coffee before heading up to the gym. I have been playing around with different times of day to work out since the weather is quickly turning hot after our 21 day streak of rain ended in Austin.
A grass-fed burger, a sweet potato and baby broccoli. Toppings were organic ketchup and some sauerkraut. I used to think sauerkraut was kind of gross, but now I really like it! I also enjoyed a glass of Kombucha that we picked up at the farmers’ market on Sunday.
After lunch it was back on my computer followed by a doctor’s appointment. When I came home I was a little bit hungry so I grabbed one of the few remaining raspberry orange muffins we had left from my baking experiment the other day. These muffins were delicious, and if you missed the recipe you can check it out here for the details. This was a total grab and go situation, and I ate it dry. The plate was only used for a mere moment for photo purposes.
I typed up my review for RBX, and decided to go do a little light cardio before dinner. Usually I go for a walk in the mid-afternoon just to get some movement in after sitting at my computer for so long However, with the heat it has become a little less enjoyable so I head up to our apartment gym and hit the treadmill while I catch up on some podcasts. It took a little getting used to the change, but I think it will ll be a good routine for the summer.
I was not in the mood to cook again so dinner was a salad of mostly leftovers and food that was prepped ahead of time. Spinach salad with chopped chicken, apple slices, a cooked beet, another carrot, and pecans. A little apple cider vinegar and extra virgin olive oil made the grade for dressing and that was all.
Now here is where the flashback took place. Do you remember the Yonana? It was the thing to have a few years ago for converting your lackluster freezer bananas into a fabulous dessert. Well, there is a bit of a banana surplus situation going down now as we speak. It is all my fault – I always buy a few too many. So I dusted off the Yonana and made a dessert concoction. It was one banana plus frozen strawberries and a few chocolate chips. It sits in the pantry collecting dust a lot so it was fun to bust it out for a change. I enjoyed my Yonana while channel surfing a bit on TV. I also ate a little more chocolate as well as another piece of chicken later on in the night. Not together of course – that would be weird. No picture, but it just feels wrong to not disclose the full details in a WIAW post.
I hope the trip back in time was not a letdown. I mean maybe it is if you do not own a Yonana. However, no harm was meant in the writing of this post.
