Hello! Here is another round of What I Ate Wednesday. This pretty much documents everything I ate yesterday.
I originally had plans to go for a hike in the morning and then to do a workout in the afternoon. However, I got caught up studying for my personal training certification and the workout did not really happen. I really enjoy hiking and walking and I’m so grateful to be able to get outside again.
Breakfast – Hot oatmeal which has become a favorite of mine again. I used to get hungry really quickly after I ate oatmeal back in the day, but adding the protein powder and some healthy fat really helps it to stay with me. I like GF Harvest Old Fashioned Oats that you can purchase on Amazon. I added a half scoop of Sunwarrior Classic Protein in Chocolate, ½ TBSP of Cocoa Powder, 1 TSP of MCT Oil and a few pecans for some crunch. A half a packet of Stevia helped to give it a bit of sweetness. It may sound strange to add oil to oatmeal, but MCT oil has absolutely no taste and when it is blended it really cannot be detected.
Lunch – Lately I’ve noticed that I’ve been eating a lot less salads and subsequently a lot less vegetables. I blame it on the winter weather since the idea of diving into a plate of cold veggies was less than appetizing. I cannot really say I can continue this excuse now though. This spinach salad included purple onion, celery, grape tomatoes and a quarter of an avocado as well as a half a can of tuna. The dressing included olive oil, balsamic vinegar, dried oregano, dried basil, black ground pepper and Pink Himalayan Salt. I enjoyed my standard half of a kombucha on the side and half of my favorite Lara Bar (Chocolate Chip Cookie Dough) as a mini-dessert.
Afternoon Snack –These were all a bit random…as in I kept having more.
I was really eager to try this new chocolate from Whole Foods so I tore off a piece of that first. Delicious of course, but not really much of a snack.So a few almonds were in order and then I went for half of an apple too. The last few I had bought were on the disappointing side, but this one was just right.
Dinner – It is not really food, but I am seriously digging Creamy Root Beer by Blue Sky. I was never really a huge soda drinker, but I used to have the occasional Diet Coke since it was just fun to have something other than water once in a while. After learning how bad Diet Coke was for me I gave it up all together, and I literally cannot remember the last time I had one. Blue Sky is an amazing soda sweetened with Stevia and it just puts me in a good mood. Dinner was simple, but perfect with Grass-fed steak, a baked sweet potato and Brussels sprouts.
Dessert – More of that chocolate I mentioned. It took some serious control to put it back in the refrigerator and forget it about it for the evening!
Catching up on Game of Thrones for the remainder of the night served as a bit of a distraction.
