Hello! Welcome to new edition of WIAW. I am not sure if they ever proved that an apple a day really kept the doctor away. However, I really have been enjoying them lately. Portable, healthy and raw. All good things, and how I have been rolling quite a bit lately. Since I started work at the gym I have been focusing on food that is nourishing, but also convenient that will get me through the day. Scott and I did a bit of meal prep on Sunday and it was very helpful as always. Although I found we did not make enough food overall! It can be hard to know what the week lies in store.
Below is a roundup of a full day of eats on a busy work day at the gym. I also fit in my own workout in there too. Lately my mantra when it comes to exercise has been adaptability. I always follow a guideline of a schedule going into the week, but with my schedule changing a lot due to work demands it can all change on a moment’s notice.
What I Ate
I had some clients at the gym who had made very early appointments so I was up at 5:00 yesterday. I am normally an early riser, but 5:00 was way earlier than my typical morning. I had anxiety about waking up on time. Do you ever do that? You toss and turn because you stress that the alarm somehow will not go off when it is supposed to start the AM chirp. The stress definitely led to a lackluster night of sleep.
Anywhoo….of course I woke up since the alarm did determine to be reliable. I cannot really eat breakfast at that wee of an hour. So a quick butter coffee in the Contigo to go and I was out the door and on my way!
I worked with two clients back to back and headed home. The gym is less than 10 minutes away so it seemed easier to come home for a break and to grab some fuel.
That food prep from the weekend came in handy because the butternut squash and bacon were already cooked. I added some kale to sautee and fried two eggs up on the stove. It felt a little like brunch, but it was still super early. I’m tell you that 5AM wake up had me all turned around.
While I was home I packed up a lunch and some snacks to power through the day. A grass-fed beef jerky, Cashew Cookie Larabar and an apple. I ate them through various intervals throughout the day as hunger decided to strike.
Lunch was a big ole salad with spinach, tuna, chopped veggies and some Greek Kalmata olives which have been a favorite of mine lately too. Dressing included olive oil, vinegar and some salt and pepper. La Croix on the side of course.
During the afternoon, I grabbed an almond flour muffin from my lunch as I trained a few clients and met with a new one to do a fitness assessment. I did not get a chance to snap a pic unfortunately! The recipe is courtesy of Elana’s Pantry, and I make them quite frequently since they are so simple and the prep time is minimal.
After finishing my workout at the gym I was ready to call it quits for the day! I drank a protein shake on the car ride back home.
Dinner was a delicious bowl of spaghetti squash with marinara sauce, wilted spinach and ground chicken.
A few pieces of chocolate as a dessert (it is almost Valentine’s Day and one needs to celebrate) and a cup of warm tea. Tea is always so soothing especially after a long day.
Write post, schedule to publish and get ready for bed. Scott and I are a little obsessed with the HBO show True Detectives. However, we did not have enough time to watch an episode last night which was a bit of a bummer. There is just something about a show that you can binge watch that just calls to you from the TV, am I wrong?
