Good morning! How is it shaking today? It has been my tradition around here for a while to participate in WIAW means sharing a full day of eating for me. This includes meals, snacks and drinks. This Wednesday is no exception! I spent the day on my computer, and devoted lots of time to hitting the books to study. Now let us dive into the food!
I like participating in WIAW to give you an idea of what a day of healthy eating looks like for me. Some days are different than others, and my meals vary a little bit from week to week. However, there is a unified theme of choosing foods that nourish me. I have found that embracing clean eating has helped me tremendously. The better I eat – the better I feel. This is a huge change from a girl who often ate pop tarts (the stawberry frosted ones) for dinner when she was at a late night theater rehearsal. Shocking, I know!
So backing up to yesterday and the food…
What I Ate
My usual morning routine started yesterday with a cup of coffee. After checking some emails, I emptied the dishwasher and decided it was time for some breakfast.
I had the same breakfast I have been eating every day for a while now. Three pasture raised eggs, Ezekiel toast and Kerrygold butter melted onto the bread. I finished up the rest of my coffee, and it was time to get on with my day!
I got dressed and started to work on a project for the blog. Nothing crazy – just some technical stuff I have had on my radar for a while now. It quickly took up most of the morning. There was a Siggi’s Greek yogurt in Vanilla Bean as a snack somewhere in there.
Scott and I have been buying kale regularly in our weekly grocery shopping. I really enjoy it, and have been experimenting with different ways to make it. I decided to opt for the kale sautéed in coconut oil and mustard. I also had grass-fed ground steak and a good serving of olive oil for a dose of healthy fat. A Coconut La Croix on the side for the win!
In this picture, you definitely spy all of my studying materials. I am working on getting my personal training certification through the NSCA. I have never taken anatomy and my last science class was years ago. The material is a challenge to learn for sure. After lunch, I grabbed a piece of dark chocolate and another cup of coffee to power through the afternoon.
I was a little on the hungry side when I turned off my computer around 5:00. So I grabbed an almond flour muffin from the kitchen. I unfortunately could only make four of these because I was low on almond flour. The recipe is from Elana’s Pantry and these muffins are perfect. They take minimal prep and little baking time.
After my workout (focusing on mobility work, stretching and kettlebell exercises) I had a protein shake to refuel. Chocolate and strawberry is always one of my favorite flavor combinations. We got the Nutribullet after Christmas, and it is great so far. It was time to retire our Magic Bullet which due to age was not so magic anymore.
A little while later dinner was underway. The meal came together fairly quickly and included pasture raised chicken, asparagus and brown rice.
I was completely full and decided to skip my usual after dinner dessert. I typed up this post with all the details of the day. As I have mentioned before, some days I am hungrier than others. It is important to keep healthy food on hand, but also to go with the flow when need be.
