Hello there! Welcome to another round of WIAW where I will be sharing a day of meals, snacks and drinks with you. The past two weeks I was traveling so today marks a return to regular eats for me.
In case you are not familiar with “WIAW” means it is simply sharing what I ate for a full day. These posts can be a lot of fun to read because it is cool to see what other people eat for fuel. It can also be a good resource for quick meal ideas. It is an opportunity for recipes that do not really qualify as recipes to be easily discovered. For example, Scott had a yogurt with kiwi, dark chocolate chunks and sunflower butter yesterday. I thought it looked really delicious, and I plan to re-create it at some point. However, it is not truly a classic recipe. You should never think you need to eat like someone else. One person simply needs more or less food than another. There is no need for comparisons – just inspiration.
So let’s jump into a summary of what yesterday entailed for me…
What I Ate
Coffee! Most important meal of the day, right? Not exactly, but I started my day with a large cup as I caught up on some emails and read a few blogs. After a little while, I was truly hungry and moved on to make something to eat.
Enter my go-to breakfast as of late. Three pasture raised eggs, Ezekiel toast, and Kerrygold butter melted onto the bread. This breakfast is just the right amount to make me feel satisfied for a few hours. Of course, I began to realize I was running a little late. I am notorious for not giving myself enough time for things. I had to get ready for an interview!
I got dressed and pulled together. Getting pulled together also included printing off my resume and refilling my Hydroflask with more water. Of course, the printer ran out of ink on my 2nd copy. No matter – I dashed out the door with one. My interview went well, and I was back at the apartment a little while later.
I was also a little hungry for a snack. I run hot and cold with a mid-morning snack. Sometimes I need one and sometimes I do not. Yesterday was in the affirmative category so I settled on my current yogurt selection. Siggi’s yogurt is delicious. I added a teaspoon of MCT oil and some Choffy which is a blend of coffee and cocoa I had mentioned in a previous WIAW. You can check them out on Amazon here.
After working on a freelance project, I decided I needed to get started on some lunch soon. Most of the time my lunches consist either of a salad or sautéed veggies with a protein source. Yesterday was no exception – Grass-fed ground beef, mixed vegetables and avocado with olive oil for healthy fats.
I finished up my article and then split a protein bar with Scott. We discovered Square Bars at Whole Foods last weekend and they are really good. Perfect flavor and consistency.
After my workout (focusing on squats and ab work) I had a protein shake to refuel.
I started to type up on blog post on Shopping in My Closet and became a little distracted. Before I knew it dinner prep had to get underway. Scott was teaching classes last night, and I wanted to eat dinner with him so I planned for an 8:30 time. Sometimes I will eat without, but I was in the mood for company.
It was a delicious dinner (sautéed kale, wild-caught salmon and roasted butternut squash).
It seemed simple, but there was a ridiculous amount of dishes afterwards. All those pans! Scott kindly accepted clean up duty while I went to put the finishing touches on my blog post.
I finished writing, and enjoyed this awesome dessert/snack. Dark chocolate with almond butter and Himalayan salt. You must give this combo a go! It is the best. However, it is really dense so just a small piece is enough. I also split an apple with Scott.
A little TV, getting ready for bed, and then time for some shut eye!
