Greetings from Austin! Welcome to a new edition of WIAW featuring more travel eats. Scott and I left New Jersey to head back to Austin yesterday afternoon. Ironically, our travel days ended up corresponding with the days I typically share a day of my meals and snacks. I decided to roll with it, and make it a follow up post.
Being in New Jersey meant fewer workouts and time outside to fit in things like a walk or a run. It was all worth it, but I have found when I am less active my appetite takes a nosedive. So while my eats were healthy I found that I was just not feeling all that hungry during round 2 of our travels plans. At least we were scheduled to be on the right flight…if you read along last week’s WIAW you know that I booked our flights incorrectly. Anyways, that is in the past now…
WIAW #22: More Travel Eats
We scrambled a little bit at the last minute to get all of our things packed up at Scott’s parents house. The morning was spent on laundry, packing and boxing up some Christmas gifts that we had to send to Austin.
After coffee in the morning with family, Scott had to run to the post office. I figured I would need something hearty to fuel the day.
Breakfast included 2 pasture raised eggs, 1 slice of Ezekiel Bread with Kerrygold butter and sautéed spinach. It was filling, and exactly what I needed.
We rushed around quite a bit to get a few errands completed before we headed out the door for our afternoon flight. It always sounds like you have more time in the morning than you actually do!
Lunch featured quick smoothies we blended up to drink as we packed up presents to ship back home.
Raw Meal Protein Powder, Collagen Protein Powder, Unsweetened Almond Milk, Organic Mixed Berries and MCT Oil with Ice. Scott and I drank those quickly so we could keep moving. We also packed up some on the go snacks to have at the airport.
This emergency bag included:
- Raw Cashews
- Kind Bars
- Apple Slices
- Dark Chocolate
After we got settled, I left Scott to grab a coffee while my computer charged at the gate. I was craving a coffee to power through the afternoon. One thing Scott and my family likes to tease me about is a time I missed a flight because I was getting coffee. I went to buy one when I entered the airport and as a result I did not get through security fast enough. Of course Scott texted me while I was waiting for the barista to hand over my Americano that we were starting to board. Needless to say I rushed back to join him.
I have to stop sharing these stories about my bad track record because no one is going to ever want to travel with me!
During the flight I munched some cashews and apple slices while doing a bit of reading and typing up most of this post.
Once we got home, I was really hungry and grabbed a snack of hummus, celery sticks and rice crackers.
We did not have many options for dinner since we were gone a while. Scott defrosted some grass-fed beef from the freezer for burgers. We also made sautéed vegetables with spinach, radishes, and purple onion. Not too shabby for a last minute meal.
I grabbed a chunk of dark chocolate as a dessert. I then went to finish up this post before beginning the unpacking process.
