Happy Thanksgiving Eve and welcome to a round up healthy favorites for WIAW.
I cannot believe tomorrow is the big day. It feels very strange not to be home in New Jersey right now. This holiday seems to have snuck up on me. I have heard that a lot of snow is predicted, and they are cancelling flight already. Safe travels for anyone headed that way!
I am going to make my pumpkin pie later today and save the rest of my cooking and baking for tomorrow. Fingers crossed I do not have to run out to the store for anything at the last minute! I feel like I always forget the one thing that I cannot do without.
In the spirit of Wednesday, I am sharing a day of unfiltered eats with you. These posts document everything I ate in a day (typically Tuesdays). All in all, I am very healthy eater, and this is a reflection of how I eat most of the time. I had a few lazy days last week where my dinners were a little haphhazrd, but yesterday was a fairly normal day. I am not a calorie counter or someone who worries too much about the amount I eat. There are simply days where I need more fuel. Needing more food usually coincides with harder workouts.
What I Ate Wednesday
Breakfast involved a current favorite of mine. Bring on the same sandwich I have been eating almost every day. I thought of having some oatmeal, but I really wanted my open faced egg sandwhich so I went with it. It consisted of two pastured eggs, a slice of Ezikial toast and a little butter. Hot coffee on the side.
The morning flew by as I read blogs, answered emails and caught up with social media. I then decided to pull myself together and head downtown. I had a couple of good leads for health coaching clients so I wanted to drop off some information. I wanted to make sure I got out mid-morning since the traffic can be really crazy mid-day. I grabbed my water, but did not really need a snack.
After getting back home, I changed and went for a short run around our apartment complex. I had a workout planned for later, but the weather was perfect and I felt compelled to get outside. I realized I had eaten breakfast hours earlier and was suddenly starving.
Lunch was in order and I decided on a salad. I have been skipping out on salads lately, and decided I really should have one yesterday. Scott and I bought lots of vegetables at the farmers market on Sunday and I wanted to see them put to good use. Sometimes I get lazy about chopping them all up. Enter a tuna salad on a bed of spinach with avocado, olive oil and apple cider vinegar.
Afterwards, I grabbed a few pieces of dark chocolate and a 2nd coffee then I was done.
I was checking my email and got some exciting news from Williams Sonoma so I had to call my mother right away to share! We chatted for a bit, and then I was back on my computer. More details coming your way about that email shortly.
I then joined Scott in our gym to workout. We usually say we are going to workout together, and then he ends up training me. Since it is how we met (he was my trainer) – I guess it is our gym dynamic. I consider myself lucky to have all of his guidance, but I have had people tell me in the past they would never want to be with a coach or a trainer because they would have to exercise all the time. To each his own I guess! I did not exercise or even move much over the weekend so it felt really good to be back at it.
I enjoyed a small protein shake afterwards…
We both hopped back on our computers a bit. I turned on the oven to roast some potatoes around 5:30 and we went for a quick walk. It was already a little chilly outside, but the sky was beautiful.
We headed back in and enjoyed a dinner of grass-fed beef, asparagus and Hannah sweet potatoes. Have you ever tried these? I picked them up at Whole Foods the other day and they are totally yummy. I highly recommend them if you see them in your travels. There was also a nice glass of cold white wine.
I grabbed a few more squares of chocolate, and went to change into my lounge/sleep clothes. I am sipping a cup of tea as I type up this post, and that is all folks!
