Good morning! It is time for another What I Ate Wednesday!
Almost every week, I have been sharing an entire day of my meals and snacks in order to give a feel for what I eat on a regular basis and to give a glimpse into my ideas for healthy eating.
What does an entire day of eating look like for you?
The answer is not always the same for me. Whether I work out or not is a huge influence on my appetite, and what I need to consume on any given day. Sometimes the style of workout or training from the day before can make a big impact too. I might only be going to a yoga class for example, but I did a hard workout the day before and I am hungry all day as a result. Whether I am home or out on the go has a big influence on my selections as well.

What I Ate
Breakfast started with some basics including scrambled eggs and toast.
I scrambled 2 eggs plus 2 more whites and cooked them on the stove with coconut oil. In the meantime, I popped the last piece of Ezikiel bread into the toaster oven to do its thing. I am not a huge fan of the end piece of bread, but a girl has to do what she has to do.
When my eggs were done I added a little extra MCT oil on them for some extra fat. MCT oil is amazing for inflammation and overall function. I typically have two teaspoons a day. I added Kerrygold butter and cashew butter to my toast along with some cinnamon. I sometimes add cinnamon or spice instead of jelly or honey. I tried it as a way to cut back on sugar, and I actually enjoy the change of pace.
Speaking of cashew butter, this stuff is absolutely delicious. I had trouble finding an almond butter the last time I was at Whole Foods. Shocker, I know! I asked around and it turns out there have been a lot of issues with almonds hence making that type of nut butter more scarce. I grabbed this cashew butter instead (it was a little pricey), but it is so good we are almost through the entire jar. Scott swears it tastes like aristocracy. I believe he might be right.
After breakfast, Scott and I headed out to the Animal Center. We wanted to start with the process of adopting Pen and needed to get him registered. Before we got started we asked if they could scan him to make sure he did not have a chip linking him to an owner. I had called the Police Station over the weekend, but no one had reported a missing dog in our area. It turns out he did have an owner after all. We were very torn…on the one hand it was good to see Pen had an owner that was missing him. However, we were already quite in love with him, and did not want to give him up.
We are grateful we saved him off the streets since no one knows what could have happened, but it felt like a loss to us. We will miss Pen!
After we came home, we were a bit down and not in the mood for a big lunch. We figured we should eat though and assembled some salads.
I made my Simple Tuna Salad:
- 1 can Wild caught Tuna
- 2 tablespoons Greek yogurt
- 1 tablespoon mustard
- ½ teaspoon of dried parsley
- Salt & pepper to taste
I ate most of the salad, but it just sort of wore me out after a while. I think that usually happens when you are not that hungry. I was feeling like something sweet so I cut up an organic red pear I had purchased at Whole Foods a few days ago. It was delicious – sweeter than a typical pear. I added more of that cashew butter too. I am enjoying it while it lasts.
Scott and I went out to run a few errands and I grabbed this lovely beverage in our travels.
I have been drinking Kombucha less frequently so it was quite enjoyable. I love the taste, but it is a habit that can really add up cost-wise. I would love to start try to make my own since I saw a tutorial on Gina’s blog recently, but I have not gotten around to figuring out that project yet.
When we got back I was sort of hungry and also trying to get a few things done around the apartment. I have not had hummus in a while, and grabbed a pack with some crackers for a quick snack.
Scott was going to be recording a broadcast with his co-host Sumair and I wanted to get out of our apartment so I could get some studying done.
I wound up at Whole Foods again! There is a location that is only 10 minutes from us, and I have been liking getting out to write and study lately. It completely minimizes my distractions. While I was studying, I grabbed a Kale & White Bean Soup from the hot bar.
I got home around 9:30 and decided on a little Greek yogurt as a snack before bed. I added half a scoop of Chocolate Sunwarrior Protein and another tiny bit of MCT oil.
So there you have it! Another day of eats around here.
