Hello there! Happy hump day. I am jumping right into the eats for What I Ate Wednesday. My typical posts document an entire day of meals and snacks on a Tuesday to share with you on a Wednesday.
My goal through these write ups is to share a snapshot of how I eat on a regular day since I consider myself to be someone who eats well on a consistent basis. I hope to inspire you with some of my meal ideas so that you can find new ways to enjoy some of your healthy favorites. I know that online blogs and websites are a huge source of information for me. Although I do eat healthy, my plan is to always try to keep things simple so that the meal planning or kitchen time does not dominate my existence. I actually do not do any meal prep, and simply food shop a few times a week to keep my favorite food staples on hand.
So let us hop to it!
What I Ate
Breakfast started with a little experiment…
I have been embracing protein pancakes as a way to start my day recently. Over the weekend, I decided to break open a can of Trader Joe’s Organic Pumpkin and came up with this recipe:
Protein Pumpkin Pancakes
- ¼ egg whites
- ¼ cup of pumpkin puree
- 1 tablespoon of chia seeds
- 1 scoop of Sunwarrior Vanilla Protein Powder
- 1 teaspoon
- Dash of pumpkin pie spice
After about 5 minutes on medium heat they were ready to go. I topped them with an “icing” of plain Greek yogurt, MCT oil and some stevia and cinnamon for sweetness.
They were delicious and very filling. The pancake mix was a little thick though so I thought I would try a variation yesterday by adding a tablespoon of unsweetened vanilla almond milk and cutting the chia seeds to two teaspoons. Unfortunately, the batter was a little runny as a result. Still good, but I preferred the first version better.
I added a little raw cashew butter and Kerrygold better as a topping and enjoyed a cold brew on the side.
I had some emails and such to attend to and then get read to head out for a workout at the garage gym with Scott. We made sure to stay hydrated with our hydro flasks filled with water. Our Despicable Me minion hung out with us and kept watch over the drinks.
After my workout, I quickly assembled a protein shake to take the edge off of my hunger. It was the usual suspect: unsweetened vanilla almond milk, Sun Warrior Classic Protein, Amazing Greens, Collagen Protein, Organic Frozen Mixed Berries and MCT oil with ice.
Lunch came in the way of a lovely surprise. Scott was home for the day with me, and offered to make lunch. He is a great cook, but works odd hours so most of the food preparation usually goes to me. I worked on my blog post while he put on his chef hat. He whipped up salads featuring: greens, grilled chicken, yellow peppers, tomatoes, goat cheese and a sauce with avocado and various spices to be used as a dressing. His arrangement was so artful! I felt like I was sitting down at a restaurant.
After sharing this fabulous salad creation on Instagram, I grabbed a few dark chocolate squares and that was that.
I worked and studied through the afternoon. Then took a quick break to have enjoy a walk and have a quick catch up call with my sister. She was headed to see the movie, Gone Girl with her boyfriend. Scott and I are planning to go this weekend. I cannot wait to see it. The book was pretty wild. I got off the phone and settled back down at our kitchen counter while grabbing a Quest Bar as a snack to tide me over until dinner. I tried a few bars from the Stevia/Natural flavor line, and ended up ordering a case of the Coconut Cashew on Amazon.
Dinner snuck up on me, but I decided to get a spaghetti squash into the oven as soon as possible since it takes an hour to fully cook. I called Scott into the kitchen because spagetti squash is practically impossible to cut open. He forgot to wash it so ended up running it under water with the knife inserted. Whatever works.
When it was just about ready for consumption, I heated organic marinara sauce on the stove and sautéed Grass-Fed beef. Toppings included: pink himalayan sea salt, pepper, oregano and shredded Kerrygold Dubliner cheese. Love this stuff. A little more chocolate and I was ready to call it a night.
After I cleaned up the kitchen, I painted my nails an Autumn green and took care of a few to-do items before calling it a night around 11:30.
