Hello! A very happy Wednesday to you!! This week feels like it is flying by in a flash. In current mid-week fashion I have a new day of meals, snacks and drinks to share today.
Let us dive into the food!
What I Ate Wednesday
Yesterday was a fairly quiet day. Since we officially entered into summer this past weekend it seems the world is slowing down a little bit. Vacations and weekends are the center focus. Everyone seems to be caught up in bustle of trying to take advantage of the good weather, and schools being closed. My email box seems a tad lighter than normal so I am using the downtime to get caught up on some projects.
The weather in Austin has been a crazy mix of rain, heat and humidity. Scott jokes that it is like Florida weather without the beach. As a result, I have been trying to get a handle on my schedule. Working from home can be a little tricky that way. You have to really find the right balance. I feel like it is a work in progress for me right now!
I was feeling one of my standards for breakfast so I decided to run with it!
Chopped kale, bacon, eggs and plantains. Hot coffee on the side.
I can drink hot coffee all year round no problem! However, I do find an iced coffee or cold brew hits the spot in the afternoon especially if I am out and about.
I worked on the computer through the morning, and then I looked down and saw that it was getting a little late. Oops. My plan has been to work out early in the morning, and I have been failing pretty badly! Usually it creeps up around 11, and I decide I better boogie because it will be brutally hot soon. I tend to get lost in whatever I am working on, and seem to let the time slip by.
I grabbed lots of drinks to stay hydrated.

Scott and I picked these Cave Man bars up randomly when we popped into the grocery store over the weekend. These were new to us, and they are rather delicious. This was the Cranberry Nut flavor. Bars are a good pre-workout snack for me. They take the edge off my hunger, but really are never all that filling. I posted some additional pre-workout recommendations a little ways back which you can check out here.
My workout lasted about an hour (give or take) and then I headed back to the apartment. My focus was on using the trap bar for deadlifts. This is a new to me exercise and I will be sharing more info on how to use it in a future post.
Next up – lunch!
Cold baked chicken, zucchini with tomatoes and an avocado wedge.
I worked on a freelance article and went back and forth with my sister on some bridesmaid dresses. There are so many choices out there! Anthropologie has a really pretty line with a few looks we were checking out.
I naturally got hungry as the afternoon wore on, and indulged a little bit with a favorite treat of mine.
Dark chocolate and Almond Butter
If you have not tried it out – well, I suggest you get on it. Just a little bit though – it is pretty dense and summer is here after all.
Scott came home just in time to join me for dinner. This one of our “go-to” meals we have during the week.
Grass-fed burgers, sweet potato fries and roasted baby broccoli from my recent Trader Joe’s haul.
I added some ketchup and sauerkraut to the burger as well. I never used to eat sauerkraut, but I love the one they sell at our farmers’ market. It is always worth it to give new or old things a try!
We wrapped up for the day by watching a little TV and doing some organizing at home. My closet is on my list of projects since we are moving soon. A lot to do!
I often have a snack after dinner, but I was not feeling it last night so that was that. “Kitchen is closed” as my grandmother used to say.
