Shall we talk salad for a few minutes? We know we should eat them, but alas it can seem very hard to get creative with a new dish on a regular basis. I like to make sure my salads have a mix of different textures and colors to keep them interesting. The better it looks the more I want to eat it!
I was never really a huge fan of croutons, but I do like adding in items that will give my salads a bit more crunch than just vegetables. Seeds and nuts are my two favorite choices for that little something extra.
Yesterday, I assembled this salad for lunch. It turned out so well that I wanted to share the recipe!
Spinach Salad with Cashews & Hemp
- 2 Cups Organic Raw Spinach
- 1 Radish
- 3 Slices Organic Cucumber
- 3 Grape Organic Tomatoes
- 2 Tablespoons Organic Red Pepper
- 1 Tablespoon Hemp Hearts
- 2 Tablespoons Raw Cashews
Wash the vegetables as necessary and chop up for your plate or bowl. Add the hemp hearts, cashews and voila! For dressing, I added balsamic vinegar and extra virgin olive oil.
I hope you enjoy the recipe if you decide to give it a go! I like salads for lunch, but it could easily work for a quick dinner.
