I have been in a love affair with eggs for years! Shh…don’t tell Scott. Eggs and I typically meet up once a day. An addiction? No, not really. I would just say that we are in a committed relationship. Delicious, nutrient dense and packed with protein. What’s a girl not to love?
Preparing a lunch is the dread of every fit girl. Trust me you are not alone! We love to eat healthy and delicious food, but let’s get real here. It is never on anyone’s list for how they want to unwind at night. Or start the day before work. Yeah, it’s just tough to find a good time at all!
However, meal prep and being ready with food for the day is absolutely crucial to meeting your health and fitness goals. You cannot wing it and expect to have the results you want to see. Clean eating fuel is necessary. Luckily, this healthy egg salad provides us a quick recipe to deliciousness. Plus, it’s a nice way to vary our lunch from the usual salad fixings.
The Incredible Egg
Eggs are an amazing food. They are a perfect source of protein and can be eaten in a variety of ways. In this healthy egg salad the eggs are savory and blend perfectly with the spices and texture of the ingredients. Enjoy with a slice of bread, a wrap, or on top of salad greens. No matter what you are reaping the benefits of this top notch protein source!
- 2 Pasture Raised Eggs
- 1 Organic Celery Stalk
- 2 Tablespoons Nonfat Plain Greek Yogurt
- 1 Teaspoon Mustard
- ¼ Teaspoon Dried Dill
- Pink Himalayan Salt (to taste)
- Ground Pepper (to taste)
- Hard boil your eggs by filling a 2 quart saucepan with enough water to cover the eggs. Cover with a lid, Bring the water to a hard boil and turn off the heat. Allow eggs to sit in water on the stove until the water cools. Drain.
- Once cooled, slice the eggs and add to a bowl. Mash carefully and set aside. In the mean time, chop the celery into very fine pieces.
- Add celery, greek yogurt, mustard and all other spices to the bowl and mix thoroughly.
- Ready to eat and enjoy!
