Today’s recipe straight from The Bikini Experiment kitchen is a bit of a twist on a classic breakfast bowl. I saw twist because there is no yogurt or milk to hold it all together (so to speak). I eat yogurt, but Scott “the coach” does not due to stomach sensitivity. We have made coconut yogurt in the past and it was delicious, but quite a bit of work was involved. So we have put that project on the back burner for now. So Scott concocted this new breakfast bowl that he has been enjoying daily.
I tried his creation for myself the other day and I can report that it’s quite tasty. So much so that I wanted to share it here! If you love anything nutty and fruity well, then you have found yourself in the right place.
I feel a common request I hear is for breakfast options that can easily be eaten on the go. Maybe that’s why there are so many versions of overnight oats out there? This breakfast bowl is so easy and can simply be put in a mason jar or tubberware for transport to work or wherever you need to be.
There’s a reason this is such a popular question! So many times we need to run out the door to battle a commute or get to a meeting that food is low priority. We end up hungry, cranky and also eating whatever is readily available. Not the best scenario right?
One of the best ways to stay ahead of the curve is to prep ahead. Even taking that extra step to pack it all up in that little lunch bag. When you are in a rush ever moment counts! Half the battle can be to find ways to make meals convenient.
- ½ Cup Blackberries
- ½ Cup Raspberries
- 1 Tbsp Raw Almonds
- 1 Tbsp Hazelnuts
- 1 Tbsp Raw Walnuts
- ½ Tbsp Honey Oats Granola (I used Udi's brand)
- 2 Tsp Unsweetened Coconut Flakes
- Wash and rinse off the berries then allow to dry.
- In the mean time, layer the other ingredients in a bowl.
- Mix all together and grab a spoon to enjoy!
