Start your day with an easy breakfast parfait! The rhyme and the ease are both intentional here. This recipe is fast, delicious and nutrient packed. Gluten-free, Paleo, low in sugar and full of a protein punch. The only thing that’s not left behind is taste.
Easy Breakfast Parfait
The first meal of the day is the one most often eaten on the go. I’ve tried my hands at all sorts of ways to make quick food that can be pulled together fast. Things like protein pancakes or egg sandwiches are favorites of mine. However, there is no denying they take time to make. Plus the dreaded clean up! Anything to avoid that disaster.
I often feel this worrisome time crunch often leads people to skipping breakfast all together. Some people do it and it actually works well for them. I personally like and think it is best to start your day with a breakfast that fits into your life. This way you won’t be starving by 10AM trying to shake down the vending machines with loose change.
On the Go
I totally understand that things like eggs and other healthified versions of diner food are not acceptable on a week day. Work is calling us, right? However, there can always been 5 minutes for a quick meal that’s pulled together on the fly. When I started working, I always had instant oatmeal that would leave me hungry within an hour of consuming it. If I didn’t eat the oatmeal I would somehow track down a bagel. Certainly not the stuff of health goals.
Carbs are essential for a healthy diet. The key is getting the right ones in your diet. Sweet potatoes, healthy breads, rice and quinoa are just a few that I eat frequently. This recipe features brown rice and it’s an excellent alternative to oatmeal. Since it can be prepared in so many different ways it can actually take on a sweeter quality. Don’t get me wrong – I love overnight oats too. But we all need options in our lives.
Meals Made Simple
This easy breakfast parfait can be prepared the night before or quickly whipped together in the morning rush. I took the time to layer it all fancy in a mason jar. I even commented to Scott that it’s much more elegant that I usually see for my meals! You can simply layer the ingredients one by one in any type of dish or bowl that you like. If a mason jar just happens to be calling your name don’t fight it either.
Spring has Sprung!
Strawberries! After months of berry deprivation they are back in a big way. I spotted organic ones in my site at the local grocery store and had to have them. It’s probably a little early to get excited since they are more a summer fruit. But a girl can dream. So we have berries, protein and some talk of rice. Let’s move on to the recipe!
- 1 Cup Non-Fat Greek Yogurt
- ½ Cup Cooked Brown Rice
- 4-5 Strawberries (Finely Chopped)
- 1 Tablespoon Raw Walnuts
- 1 Packet of Stevia
- Honey (to taste as a drizzle)
- Cook the brown rice ahead of time and allow to cool.
- Add the Stevia to your yogurt.
- Take a bowl or jar and layer the yogurt, rice and strawberries as individual layers.
- Top with the walnuts and drizzle of honey.
Now you are all set! For a lazy Sunday morning I totally recommend these pancakes or baked french toast.
