It’s been a slow phenomenon, but I have slowly started to see butter become a new phase in healthy eating styles. I grew up on margarine because everyone was deathly afraid of cholesterol and eating real butter was the equivalent of signing up for a heart attack. Who doesn’t remember Fabio strutting out on his horse hailing that “He couldn’t believe it wasn’t butter!” However, I have seen grass-fed butter become really popular as of late especially with Paleo style eating. If you are being a purist you technically could not be “paleo” and consume butter at the same time, but I digress. Butter can really be a great source of nutrition for many people because it does not have the same ill effects of milk proteins.

I never would have thought to add it to my coffee. I was introduced to Bulletproof lattes recently and they typically contain coffee, Kerry gold butter and MCT oil.
I started to incorporate Kerry gold butter into my diet about a year ago. I do not eat it every day or in large quantities but have learned how the right saturated fats can offer a lot of benefits. I recently started following Diana Sanfalippo of Practical Paleo fame on Twitter and I saw her tweet about Picnik in Austin. I knew I wanted to check it out while I was down here since it sounded really unique. On their website I saw that it was a Paleo style coffee stand and I was excited for an almond flour brownie to go along with my java.
It is most definitely a coffee stand and easy to drive by and miss it.
This was such a cute place and I ordered the traditional Butter Latte with upgraded bulletproof coffee. Lunch included a piece of quiche with almond flour crust. Delicious!
