Very Berry Spinach Salad
There is something about the warmer temps that leave me craving salads like crazy. If you follow me on Instagram you probably saw the delicious one I posted recently with peaches. Don’t think that’s not on the list of items to recreate because it surely is. The only thing that gets a little stale is that I often default to the same veggies every darn time I go to the food store. It’s like I have blinders on and only seek out the same things on repeat. Well, that’s dangerous because it leads to utter boredom. No one should get tired of their salads. That’s just sad. Salads are my favorite thing for lunch because they are so darn easy. They are also a nice dinner choice when we get crazy 100 degree weather in Austin. This weekend I made brownies in the heat for Scott’s birthday. I know he appreciates the effort, but it was HOT and nothing short of a sacrifice on my part.
Meals Made Simple
My philosophy when it comes to eating well is to keep meals very simple. Not every day or meal is designed to try a new or fun meal because we all have busy lives! I remember when I discovered protein pancakes back in the day and it was my new thing for breakfast. Like every day. Well, I soon realized I had a job to get to every morning. Busting out the pots and pans, eating my pancakes and cleaning up a messy kitchen is not meant for a weekday morning. It’s a special occasion meal. So now I evaluate meals as to how realistic they are in terms of my day and busy lifestyle. If keeping up the prep work is overwhelming then it’s time to reevaluate how fancy you are getting in the food preparation department. I’ve learned my lesson!
- 2 Cups Baby Spinach
- 4 Large Strawberries
- ½ Cup Blueberries
- ½ Avocado
- 6-8 Ounces Grilled Chicken
- 1 Tablespoon Olive Oil
- 2 Tablespoons Balsamic Vinegar
- 1 Teaspoon Pure Maple Syrup
- ½ Teaspoon Dried Thyme
- ⅛ Teaspoon Dried Ginger
- Pinch of Pink Himalayan Salt
- Prepare your grilled chicken so that it is cool to touch to place on the salad.
- Wash and rinse all of your produce and cut in small pieces.
- Assemble your salad.
- Mix your salad dressing and add on top.
- Ready to serve and enjoy!
